Ignoring phase issues. When you're running stereo, always check your mix in mono to make sure nothing disappears. If your stereo delay sounds amazing in stereo but completely vanishes when you collapse to mono, you might have a phase cancellation problem. Most modelers have a phase flip option to fix this.
Using stereo as a crutch. Stereo makes good tones sound incredible. It does not make bad tones sound good. If your amp capture sounds thin, fizzy, or lifeless in mono, adding stereo effects is just going to make it sound thin, fizzy, and lifeless in a wider space. Fix the foundation first. Start with great profiles and captures, then let stereo take them to the next level.
